Perhaps only through the power of barbecue can a 60-year-old joint in a city best known for pecans transform into one of the culinary world’s newest sensations. At Davila’s BBQ in Seguin, third-generation pitmaster Adrian Davila has become a bonafide culinary celebrity, complete with a widely acclaimed book, and regular appearances on the Cooking Channel and Food Network.

Patriarch Raul Davila launched the business in 1959, and his image is emblazoned on the restaurant’s logo. Raul taught his son, Edward, to succeed him as pitmaster. Now, Edward passes along the art and craft to his son, Adrian, who adds an easy charm and brings new technology to the skill and the family’s Mexican-American flavors.

“People in the national media started getting that Davila’s embodies family and barbecue and passion,” Adrian says. “To care about those crafts takes so much time, effort, energy and money.”
